Banana Apple Bread

I don’t like cooking. At all. I don’t even like baking. But, sometimes the hungry stomach is stronger than my unwillingness to discover the beauty in the art of cooking. And when that happens, it’s instant karma – a mocking fridge that holds nothing but too many bananas, some apples, and 1 egg.

This naturally happened today – on Sunday – when all the shops here in Bavaria are closed. So, starving enough to do the wild thing, I went into “save yourself” mood and prepared something from the things that I had at home. It was surprisingly good, so I’m sharing the recipe here. Besides that, the recipe is gluten and lactose free, sugar free, and appropriate for paleo diet. 

Make your own Banana Apple bread


4 bananas
4 apples
50 g coconut oil
2 ts baking powder
1/8 cup of honey (I used Forever Bee Honey)
1/2 ts cinnamon
1 egg
1 cup coconut flour
1/2 cup chia seeds


Peel and cut the apples. Add just a little water and cook them into a sauce. At the end add the cinnamon and wait for the sauce to cool down. In the meantime mash bananas into a nice paste.

When the apple sauce is cooled, mix it together with bananas and add all the wet ingredients and baking powder. Finish of with adding the coconut flour and chia seeds.

Let it sit for a few minutes and prepare the pan. Make sure you grease it good otherwise the yummy bread will stick.

Heat the oven to 180 degrees and use the fan. 45-50 minutes and your bread should be baked. I used a bigger pan to make sure the bread gets baked through and through and was really happy with the result.

The end result is more “Kuchen” (cake) than a bread, but is oh, so yummy! Serve it as it is or be even more wild and add a scoop of ice cream or whipped cream (if you have it at home of course).
